Speaking of this region, one cannot ignore the delicious Provencal cuisine based on fish, seafood, fragrant wild herbs, rosemary, fennel, vegetables, and olive oil. Despite being similar to other Mediterranean cuisines, Provencal has its own character. Must-try dishes include the famous bouillabaisse, tripe in spicy sauce, Nice salad, vegetable ratatouille, truffles, and goat and sheep cheese. And don’t forget the local rose wine! And, by the way, it was in Provence where the recipe for the famous «Provencal» was invented.
Provence is also a real gift for fans of ancient architecture. The medieval monastery of Saint-Trophime, the castle of Maisons Carré in Nîmes, ancient ruins near Saint-Remy-de-Provence, the fortress at Les Baux, and the Roman amphitheater at Arles.
